A rural drive and such...



Hi everyone.. 
So glad you dropped by.. 
We went for a little rural drive on the weekend and thought you might like to see how we have lost most of our snow.. 
Spring has sprung.. sort of.. smile.. 


We had a couple of days and nights of roaring like wind that just devoured the snow.. 
Rain, too.. 
The rivers are full but so far no flooding.. 
Thank the Lord.. 


I am always on the look out for livestock and chickens.. 
I love chickens and geese and ducks... 
All of the above are in the picture but you can't see the chickens which are on the other side of the fence.. 

And then... 


We drove past these two darlings.. 
How I love them.. 
They are shedding their winter coats.. 

And of course ... sheep.. 
I keep asking for a couple but so far it hasn't happened.. smile.. 
Who knows, though... 

A lot of huge farms around the area.. 
This is rural New Brunswick.. 


I think I will take a few pics in the city next time we go.. 
We only live about half an hour from one but it is a small city compared to such cities as Toronto or Montreal... 
I prefer small cities... 
Do you? 


The old church that Terry attended growing up... 


Huge piles of wood everywhere.. 
This is a province rich in some natural resources and wood is one of them.. 
A lot of us burn wood for the Winter heat... 


Then we dropped by the farm for a few hours and I made a loaf of French bread.. 
I used the no knead recipe but replaced the water with potato water.. 
It gives the bread a nice texture and has Vitamin C and potassium to aid health.. 

Some people freeze their potato water in ice cube trays for bread recipes and it thickens gravy or you can add to soups and stews.. 
I also freeze carrot water and such ... 

At the beginning of each week now I make this little Jewish type salad..  


Chop up tomato, cucumbers, onions, green pepper and lots of herbs.. Parsley, mint and such.. 
Add some olive oil and lemon juice.. 
Add salt and pepper when serving.. 

We love it with omelets, in pita bread or as a wee side salad.. 

Or like this.. 

Made a nice little lunch for us with the new bread... 

This picture was taken today when we dropped by to see a couple of my young cousins who have moved to our area.. 


Lovely out but a bit cold..
