The end of July has come so quickly. This Charly and I's last full week of summer break from school. While this week had its highs and lows, it's always good to take a few minutes, look back and realize that even on bad weeks, most things are actually good. Here are some of the good things that were my favorite from this past week.
We had a cloudy, overcast day yesterday, which brought a bit of rain last night.
Because of all the clouds, we didn't get to see the "blue moon" last night, but this is what was left of it this morning. Pretty cool, the way its peeping out there right between those dark clouds. Kind of looks like the pupil of a large eye.
The rain clouds moved on and the sun was back this morning. This is part of our backyard as the sun came up this morning.
My car was filthy and I finally washed it the day before it rained. As the rain came down Friday, my car was safely tucked away in the garage and stayed nice and shiny and water-spot free.
The physical therapy for my neck and should continues to go well and I am making progress in leaning new postures and habits and strengthening my muscles. The foam roll, pictured above, has become my new favorite piece of exercise equipment. I use it at the physical therapist's office and last week, I got one of my own for home use as well.
I have continued with the task of going through my closet. Last night, I went through and tried on all my pants and jeans. Quite a few pair went in the donate pile and then I organized my closet better with what remained.
I'm not super tall (only 5'4") so I found these pants that I purchased but never hemmed, so now I have "hem pants" on the to-do list for next week. It's all part of getting ready to go back to school.
We got an invitation to be present at the Gilbert Temple when some good friends of ours become a "forever family" with their recently adopted five-year-old. What a happy event! We wouldn't miss it for the world!
I finished the book on the left this week, Refining Fire by Tracie Peterson. A review will be coming next week. I am now reading an excellent positive mental attitude book recommended by my physical therapist called The Energy Bus by Jon Gordon.
Finally, a couple of favorites for my inner-foodie. If you like cheese, give this a try. It's available at Costco and is called Kerrygold Dubliner cheese - my new favorite thing for lunch...
...followed by one of these delicious and very healthy little no-bake cookies. I really like these little cookies. We took them with us vacation so we had a healthy snack to eat in the car. Here is the recipe:
"Healthy No-Bake Cookies"
1 cup creamy peanut butter
4 TBSP. honey or agave nectar
2 tsp. vanilla extract
pinch of salt (optional)
1 cup rice krispie cereal
1/2 cup flaxseed meal
1 cup old-fashioned oats, uncooked
Optional add-ins: raisins, chopped up nuts, craisins, mini chocolate chips (about 4 TBSP.)
1. In a medium-sized bowl, combine the peanut butter, honey vanilla dn salt. Microwave 20-30 second and stir until combines.
2. Add the Rice Krispies, Flaxseed meal and oats. Stir until completely combined.
3. Add optional add-ins and mix well.
4. For ball with the mixture and then flatten the balls in your hand to create a cookie shape.
5. Store in an airtight container for 4-5 days or freeze up to 3 months.
Finally, I will end with this thought - one I truly need this week - as I look forward with optimism to next week and beyond!
