Exploring Health and Wellness at HEB, we decided to make one of our "Ready Set Cook" recipes. This would not only give us the opportunity to prepare a healthy option of foods but also help encourage customers and partners to introduce some healthy recipes into their lifestyles. This Avocado & Mango Chicken Taco recipe, offers some flavor and some sweetness.

This recipe not only has a healthy twist, but also provides added nutrients and health benefits.


HEALTH BENEFITS:
Grilled Chicken- good source of protein, helps with muscle recovery and satiety for weight management

Avocado- good source of healthy fats, monosaturated fats which help lower bad cholesterol and help promote heart health

Mango- good source of fiber, promoting digestive health and lowering bad cholesterol









AVOCADO and MANGO CHICKEN TACO
Yield: 4 servings Prep Time: 10 minutes Cook Time: 0 minutes

INGREDIENTS: 
1 lb. H-E-B Natural Boneless Skinless Chicken Breast, cooked and chopped
1 avocado, peeled, cored, sliced into 1/2 inch pieces
1 fresh mango, peeled & cubed, or 1 cup frozen mango chunks, part thawed and drained
1/4 c. red onion, diced
3/4 c. plain Greek yogurt
1 lime, juiced
1/2 tsp. garlic powder
4 H-E-B Whole Wheat Tortillas

DIRECTIONS:
1.In a mixing bowl, combine chicken, avocado, mango, red onion, yogurt, lime juice, and garlic powder. Salt to taste.
2.Warm tortillas.
3.Divide mixture evenly onto tortillas and roll into tacos.
